Taco is a traditional Mexican food. It is mainly made of corn flour and wheat flour. The taco shells can also use a tortilla wrap cut into small round pieces with small round dipping plate . The main ingredients are roast beef, chicken, pork, fish, shrimp, vegetables, cheese, and even insects. Taco’s name comes from Spanish. It was also the first Spanish wrap to be introduced to Mexico by Europeans before Spanish colonial rule. The earliest taco shells were used as dish bowl to having food on it. Later,we can easily get Toco meal from any where,no matter small vendor , restaurant even in high-end restaurants . Toco become popular in the world. Also,just a few years ago, in the United States gourmet documentary (ungly delicious), foodies highly commented: “Every second of delicious experience is more delicious than any other cuisine in the world, It is Taco from Mexico.” Taco itself is not enough for foodies to enchant it, economists create Taco Bell chain restaurants for it. Its main soul still comes from its several sauces: green sauce (salsa Verde), minced sauce (salsa picoda), red sauce (salsa rojo). Green Sauce (Salsa Verde): Made with ripe green tomatoes, added with Jalapeño or serranos peppers.Red sauce (Salsa Roja): bright red color, usually made from cooked tomatoes, red peppers, onions, garlic, fresh coriander.Salsa Picasa: Also known as the pico de gallo, mixed with chopped tomatoes, onions and jalapeños, without being mushy, it is relatively refreshing. Mexicans love spicy sauce very much, and most kinds of dishes put spicy sauce in it. If you are going to travel in Mexico, you will step into the “stuffing well of food” if you accidentally order it. Making steps: 1. Mix corn flour and low gluten flour evenly
2. Add a small teaspoon of salt and 2 tablespoons of oil and add half of the water to stir.
3. Then slowly add water as needed to knead the dough
4. After kneading the dough evenly, put it aside for half an hour
Steps to make stuffing:
1. Preheat the suacepan and put the onion and garlic in it Sautee for five minutes with medium-high heat
2. Put the minced pork into it and cook until it is half cooked
3. Add tomato sauce, salt, pepper, origanal and other seasonings and stir fry evenly
4. Place the filling on the plate and set aside
Taco leather steps:
1. After kneading the dough, roll it into a thin dough

6、泡泡稍微变小点再加三分之一糖(打蛋白的糖)转中速继续打发
Add 15g of sugar after the bubble became small, meanwhile turn eggbeater to midium speed then keep going
7、泡泡基本没了,加剩下的糖转低速继续打发至,提起打蛋器,蛋白霜可以沟出小小山丘。
Add the rest of 15 gram sugar when bubble almost disappear ,keep beating until you can see two little hills after you take out eggbeater
8、蛋白霜分三次倒进蛋液中切拌式搅拌均匀,不能画圈搅拌

9、在长方形烤盘上铺上烤面包专用纸防止粘盘,把蛋浆平铺上去,震动几次,把气泡震出后放进烤箱place a baking sheet on top of rectangle shape baking plate, pour egg mixture on the plate, shake the bubble out then put into oven
10、烤20分钟,烤到面包深黄色后,拿出烤箱震动两下,脱模待凉,待蛋糕还有还有些温度时就可以
Around 20 minutes, take cake out when it turn to nice dark golden colour, shake it three times, Let it cool down a little bit
11、等待蛋糕待凉的时间,把淡奶油放到冰镇的干净容器里,加糖中速打打发
Pour whipping cream liquid into heat proof bowl ,add icing sugar , beat it with manual eggbeater in midium speed. stop it until you see two little hills as picture shows below
12、蛋糕还有些温度时,把奶油铺上去后,卷起来就好
Apply whipping cream evenly on cake when it still have a little temperature.and roll it up

The first record of the recipe were printed at the end of nineteen century.Paspas Rellenas is affected with French cuisine. It’s not too hard to make it, but they are a few steps to finish.Genernaly,it is potato warp filling with ground beef,cumin, onion, bell peppers, garlic,salt,pepper and tomato sauce,and the deep fried balls it look crispy outside and taste luscious inside. It is one of popular food in Latin American countries.

Paspas Rellenas
Ingredients for stuffing:
Potatoes: 2 lb
Ground meat: 300g
Onion:130 g
Bell peppers: 100g
Black pepper:1/4 teaspoon
Garlic cloves: 1 PC
Tomato sauce: 50g
Salt: 1 teaspoon
Oil: 1 tablespoon
Steps to make stuffing:
2. Add the ground pork and suateed with medium-high heat until pork has turned slightly pink
1. Heat up non-stick pan and add one tablespoon oil and minced garlic, stir fry the onion for a few minutes until the smell of onion flavor coming out
3.Add tomato sauce, salt and pepper, stir it evenly
4. Take out the meat filling and place on a plate, set it aside.
Stuffing
Ingredients for skin part:
Patato:2 lb
Salt :2 teaspoon
Milk :3 tablespoon
Cheddar cheese: 50 g
Steps for wrap:
1. Boiled potato until it is soft enough to mash
2. take out patatoes ,then peel the skin off when potatoes cool down
3. Mash them well with milk , salt and cheddar cheese at a time.until it became smoothly and puffy.
Ready to make patato balls:
1.Use medium size icecream scoop to measure size of patato ball,take one scoop of mushed potato and flatten the dough into round risk
2.take one teaspoon of filling, place on the center of dough. As it shows below
3. Carefully wrap it into ball shape
Coating the balls:
egg: 1 Ea
all purpose flour:100g
bread crumble;100g
1.Cracked an egg on the little plate,set it aside
2.Mix flour and bread crumbs together evenly.
3.Take a ball each time and dip it in the egg and coat it carefully in bread crumb mix
4.Once finish coating all the balls,Put them in the freezer for at least one hour
Deep fried potato balls
1,Add 4 cup of oil In a medium pan , make sure oil reach to 350-375℉, fried 5 to 6 balls at a time
2.Take them out when it turns to nice golden brown colour, place them on the paper towels to adsorb oil from the patato balls
sasal sauce ingredients
Tomato. 1 Ea
Coriander.5g
Onion.10g
Salt. Appropriate amount
Pepper. Appropriate amount
Spicy. Optional
Mix all the ingredients together well
Taste it!
