茄子焗肉碎 Bake Eggplant with Pork

茄子本身不是很好吃,它需要肉类或者重口味的调味酱料来增加它味道的变化。如果我只是单炒茄子的话,一般家人都不喜欢吃。但是加点肉加点汁,味道丰富。,一抢而空是分分钟的事。

步骤 Steps
1、将肉末的材料都放在碗中,调和均匀备用
Well combine all the meat stuffing ingredients together,set it aside
2、把酱汁材料放一起调和均匀
Mix all the suace ingredients evenly
3、把茄子切成等长的小段
Cut eggplant into same sections
4、每一个茄段切成四个长条
Cut each section into 4 strips
5、每一个小条中间切一刀,不要切开
Cut the eggplant strips from the middle but don’t cut it off,show picture as below
6、刷的点油,撒点胡椒粉和芫茜干叶
Brush some oil on eggplant and sprinkle with black pepper and parsley leaves flakes
7 、把肉馅填到茄子中间
Filling with pork stuffing on each eggplant strips
8、预热烤箱到350度,把茄子放进去烤15分钟左右
Preheat oven to 350 degree,then put the eggplant into oven to bake for 15 minutes
9、关掉烤箱,让茄子在烤箱中再焖几分钟
Close the oven, let eggplant stay inside for few more minutes
10、热锅后,放点油、蒜泥,洋葱丁、青红椒丁和剩下的肉馅,炒香后放入酱汁
Heat up wok,and add oil, garlic, meat filling leftover,diced onion and bell pepper, pour the sauce into wok after the aroma of meat and vegetables come out.
11、用生粉水勾芡一下酱汁
Thicken with the mixture of potato starch
12、拿出茄子排盘
Take out eggplant from the oven, and place them nicely on plate
13 把酱汁均匀的倒在茄子盘上
Pour the sauce evenly on the eggplant

芝士焗龙虾,Bake lobster with cheese

芝士烤龙虾,顾名思义就是龙虾加入芝士烤出来的。在北美龙虾并不是一道非常昂贵的菜肴,而在中国有时龙虾是决定一场婚宴是否气派非凡的主角菜。小时候经常会听到七大姑八大姨讨论“连龙虾都没有,这酒宴的主人太小气了。”虽然 现在大家生活好很多,龙虾并不是唯一的盛宴主角,但还是改变不了它在人们心中的“贵族气质”. 中式做法的清蒸龙虾,避风塘龙虾吃多了,今天换一下口味,做西式的芝士焗龙虾,简单易学,不失高雅。开始动手吧!

一磅左右龙虾 One pound of lobster
3 只 (whole lobster)
黄油 Butter
40克 (gram)
帕玛森芝士Parmesan cheese

干罗勒叶 Dry parsley leaves flakes

步骤 Steps:
1、把龙虾对半切,清理出脑部内脏备用
Cut lobster into half,then remove lobster internal organs and unwanted things from the head of the lobster,
2、均匀撒点盐和胡椒粉在龙虾上
Sprinkle evenly some salt and pepper on lobster
3 、黄油微波炉加热15秒,加入蒜泥和帕马森芝士搅拌均匀
Heat butter for 15 second in the microwave,and add in minced garlic and Parmesan cheese, then sitr them evenly
4、把黄油均匀的刷在龙虾肉上
Brush the mixture of butter on the lobster

5、均匀的撒点干罗勒叶在龙虾上面
Sprinkle parsley leaves flakes eveny on top of lobster
6、在龙虾肉上撒满切大芝士
Spread cheddar cheese on top of lobster meat
7、烤箱预热到165度后,把龙虾放进去烤15分钟
Preheat oven to 165 degree, bake lobster for 15 minutes
8、拿出后排盘
Plating lobster after you take out them from oven

鸡腿肉卷 Chicken legs wraps

鸡腿肉的做法很多,有煎的有炸的,

有烤的还有炖的。但这种做法还是很少有

人做,看似复杂,其实很简单。做出来的

既好吃又高大上。让我介绍一下怎么做

吧!

材料 ingredient:

鸡腿肉 Chicken leg without bone
2 大块( pieces)
火鸡片 Turkey slices
4 片(pieces)
四季豆 greenbean
6 根(pieces )
盐 Salt
适量 Appropriate amount
胡椒粉 Pepper
适量 Appropriate amount
面粉 all purpose flour
3 汤勺 (table spoon)
鸡蛋 egg
1 个(piece)
酥皮炸鸡粉 crispy chicken seasoning mix
4 汤勺 (tablespoon)
步骤Steps:
1 、把鸡肉洗干净后,把厚的部份剃薄
Clean the chicken legs and cut off thicker part
2、均匀的撒些盐和胡椒粉腌制鸡腿肉15 分钟
Seasoning with salt and pepper on the chicken legs for 15 minutes
3、在鸡腿肉上面放两块火鸡片
place 2 slices of turkey on the chicken

4、把四季豆放在火鸡片上
Place green beans on top of the Turkey slices
5、把它卷起来,如下图所示,再放在锡纸上
Roll it up as tight as possible. which is showed in the picture below, then place on the aluminum foil paper
6、把他跟糖果一样卷起来
Roll them up as a big candy
7、放在热锅中蒸8分钟
Steam them over hot water for 8 minutes
8、打一个蛋在盘子中备用
Crack a egg on the plate,set it aside
9、把蒸好的鸡肉卷裹一层面粉,再裹一层蛋液,最后裹一层炸鸡粉
Coating chicken wrap with all purpose flour,then egg liquid , lastly coating with crispy chicken seasoning mix
10、热锅加入适量的油,加热油后转中小火
Preheat sauce pan and add appropriate amount of oil for frying chicken legs.turn to midium low heat after oil was hot enough
11、把鸡肉卷放进去中小火炸7分钟后转大火炸一分钟
Deep fried chicken wraps for 7 minutes with midium low heat.Then turn to high heat, deep fried them for 1 minute more.
12、切小块可以放盘开吃了
Cut into small pieces and ready to eat
13、把它们切成两段,摆放在盘子上,加点清炒蔬菜稍加点缀
Cut it into two sections,place them on plate ,decorate with some stir fry vegetables

培根芝士鱼柳卷 Fish Bacon Wrapped with Cheese

培根主要是猪肉经过一些工艺程序烟

熏腌制而成。它带有适口的咸味,还有浓

郁的烟熏味,是早餐三明治中不可缺少的

味蕾添加剂。它可以用来做夏威夷比萨,

还可以卷多种海鲜煎煮成美味佳肴,还可

以用来炒面炒菜。在平淡的味道中增加变

幻无穷的味蕾享受。今天我要介绍的是培

根芝士鱼柳卷,让我动手吧!

材料 Ingredients:

鱼柳 Basa fish fillet
1 条(piece)

培根 Bacon

9 条(slices)

切达芝士 cheddar cheese

45 克(gram)
芦笋 Asparagus
200 克(gram)
生菜芯 lettuce
适量Appropriate amount(for presentation)
土豆 potatoes
5 个中等大的(midium sizes)
牛奶milk
250 毫升 (ml)
盐 salt
适量 Appropriate amount
胡椒粉 Pepper
适量 Appropriate amount
干香菜叶Parsley leaves flakes

红罗卜 carrot

鸡汤 chicken broth

100毫升(ml)
步骤 Steps:
1、鱼柳洗干净,切片备用
Clean the fish and slice it into 3 small piece

2、撒点盐,胡椒粉腌制鱼柳

Sprinkle some salt , pepper and parsley leaves to season the fish

3 、在菜板上平铺三根培根条,在培根上铺一片鱼柳块

Place 3 piece Bacon on cutting board and top with fish
4、放15克的芝士在鱼柳上面,再放一根芦笋
Put 15 gram of cheddar cheese on top of fish also one asparagus
5 、把它卷起,如下图所示
Roll it up ,show picture as below
6、预热烤箱到165度,把卷好的培根鱼柳卷放进去烤20分钟
Preheat oven to 165 degree,and bake bacon fish wrap for 20 minutes
7、把土豆煮熟后剥皮捣成泥
Cook patotoes untill it’s solf enough, and mash potatoes after the skin of them was peeled

8、加热汤锅加入黄油20克,然后加入土豆泥炒匀

Preheat sauce pan then add 20 gram of butter, stir it until it melt into liquid, and add mushed potatoes ,Stir them evenly
9、加入牛奶250ml,再加入高汤100 ml搅匀煮开

Add 250 ml of milk and 100ml chicken broth, combine them well

10、芦笋在汤锅中水煮一下备用

Cook the asparagus in the hot water,set it aside

11、取出烤好的培根卷和土豆泥一起摆盘
Plating all the things you cooked nicely on the plate

椒盐鱼 fish with spicy and salt

椒盐鱼

主要材料 Ingredients:
鱼柳 fish fillet
一条 one whole piece
青椒 Green peppers

红椒

步骤step
1、把青红黄椒,洋葱切丁备用
Cut peppers and onion into cube
2、把鱼切片后挤出水份
Squeeze the water out of fish after you slice it.
3、放点盐,蛋液腌制鱼片
Seasoning fish slices with a little bit salt and egg liquid
4 、放1勺生粉和1勺面粉到鱼片中,加点水搅拌均匀

Add one tablespoon of each potato flour and all purpose flour into fish slices.and some water then combine them well

5、再裹一层干粉
Coating fish slices with dry potato flour
6、加热油锅,高温油炸鱼片
Heat up midium sauce pan with appropriate amount oil ,deep fried fish with high heat.
7、炸至酥脆呈金黄色
Take out fish slices,until it is crispy with golden colour,set them aside
8、加热炒锅,热油炒香蒜泥
heat up wok, and add oil and garlic stir fry for 30 second

9、放入青红椒,洋葱继续炒至五分熟

add Bell pepper and onion into wok and stir fry until vegetables are half cook

10、放入炸好的鱼片,均匀的撒进椒盐粉炒匀就可以出锅

Add deep fried fish into wok ,sprinkle with salt and pepper,sitr them evenly,then ready to placing them on the plate

卷心菜卷 cabbage wrap

卷心菜卷,就是以卷心菜为皮包裹各

种馅料的菜肴。在巴尔干,中欧、东欧、

北欧和西亚都十分常见。据说卷心菜卷最

初来源于犹太,但好像没有什么可以考研

的依据。包法都基本一致,但不同国家的

馅料都有一定的区别。欧洲国家可能就喜

欢加入芝士的馅料,而中国人民就喜欢肉

加葱姜和成的馅。毕竟心需要有血有肉的

人来呵护,才能让它卷走你的胃,卷走你

的心,卷起你的幸福。开始动手起来吧!

步骤 step:

1,剥下10片卷心菜叶
Take off 10 pieces of cabbage leaves
2、煮开热水,放点盐和油,把卷心菜放进去煮熟它
Add a little bit salt and oil in the suace pan with boiled water , Cook cabbage leaves until it is soft and cooked
3、拿出卷心菜晾干备用
Take out cabbage leaves and let it air dry a little bit,set it aside
4 、切碎蘑菇香菜备用
Minced mushroom and parsley leaves,set them aside

5、把所有的馅料放在大碗中,搅拌均匀

Well combine all the stuffing ingredients together
6 、用卷心菜当皮,放适量的馅料,跟卷春卷一样卷起
Put right amount of fillings on the cabbage leave,roll it up just like roll a spring roll
7 、在热水锅中煮熟或者放在甜酸浆中慢火煮熟
Steam over hot water or slow cook in the sweet and sour sauce

太极图椰奶糯米饭 Coconut Rice

八卦太极图是自古留下未解之谜。黑白为阴阳,其中白色为阳,黑色为阴。从正下方黑白相交的这一点开始,看成“表针”顺时针旋转。黑白相交为阴阳,白色为阳,黑色为阴。“孤阳不生,孤阴不长”,

黑糯米 Black glutinous rice
300 克 (gram)
白色糯米 White glutious rice
300 克(gram)

椰奶 Coconut milk

步骤 Steps:
1、把黑糯米,白糯米分别浸泡在水里一个晚上
Soak the black and White glutinous rice in the water over night
2 、清洗两种米各两次
Wash both kind of the rice for couple time
3、把白糯米放蒸锅中蒸25钟,(白糯米容易熟,蒸的比较有嚼劲)
Steam White glutinous rice in the steamer for 25 minutes to keep chewy
4、把黑糯米放在饭锅里煮
Cook black glutinous rice in the rice cooker with some water just 0.6 centimeters over rice and add 1 tablespoon oil

5、糯米饭都煮好后拿出放碗碟中备用

Place sticky rice on the plate,set them aside
6、在汤锅中加入水和椰浆,煮开之后用生粉水勾芡
Pour water(350ml)and coconut milk in the sauce pan with high heat,and thickening with mixture of potato starch and water after it’s boiled.

7、在黑白糯米饭中各加3 大勺椰浆糊,搅拌均匀。剩下的椰汁等吃的时候根据个人口味再加,(饭中不宜加太多椰汁,那样让米粒过于松软)
Add 3 soup spoon to both black and white sticky rice, and Stir them evenly.
( Don’t add too much in the rice,keep chewy)
8、切好青瓜如下图

9、多花点时间把糯米饭整成一下图案
Place them like pictures show as below
10、吃之前可以多浇点椰汁,加点冰淇淋和水果一起吃也非常好

11、吃不完可以用保鲜膜包好,存在冰箱冷藏

葱油饼 Scallion Pancakes

葱油饼据说是源于东汉时期山东的烧饼铺,是一种由面粉混合葱花和盐烙成的饼,放在加热铁板加油慢火烙制而成,金黄色表皮,酥脆可口,令人回味不已。相传著名航海家马可波罗到中国,吃了葱油饼,对它的味道念念不忘,回国后,厨师按照他的描述做葱油饼,可就是怎么也做不出来,就做成了比萨的样子。就这样葱油饼成了比萨的“祖宗了”. 不论历史如何,只要是美味就有代代相传下去的理由。不论原始做法怎样,我们追求的是在原始口味的基础上,加以改进,让口味往更加富于创造性的发展,让它能走出国门。但首先来学学基本款的做法。

It said that scallion pancake is one of pancakes sold in Shangdong province of China in the eastern Han Dynasty. It is kind of Pancake mixed with scollion then fried on the iron pan to form a large round cake。
Also,according to legend, pizza is original from scallion pancake. Marco Polo wanted to eat Chinese scallion pancake when he returned to Intaly;but there’s no way to get scallion pancake in Intaly at that time. he asked a chef to make it according to his instruction . However, the chef didn’t know how to put the filling into crust. He had to put the filling on top of crust and directly into the oven. Later, people add cheese and tomato sauce on the top.It was called pizza. No matter it’s true or not. Let’s start to make scallion pancake.
面团材料 Dough ingredients:
通用面粉 All purpose flour:
200克 (gram)
温水warm water(around 50 degree
100克(gram)
盐 Salt
1/4 茶匙 (teaspoon)
菜油 vegetable oil
1 汤勺( tablespoon)
酵母粉 yeast
3克(gram)
配料 Accessories:
葱花 minced scallion
Appropriate amount

橄榄油 olive oil

步骤 steps:
1、把酵母粉加入温水中搅拌均匀后放置五分钟
Mix yeast with warm water well and let it rest for 5 minutes
2、把粉放入和面盆中,加入盐,油混合均匀
Put the all purpose flour into a big bowl, add the salt and oil,then stir it well
3、缓慢的加入酵母水,边搅拌边加入温水,搅成棉絮状后揉成面团
Pour the mixture of warm water and yeast into flour mixture slowly while stirring them evenly,then knead into dough
4、盖好面团静置一个小时
Cover the dough and rest it for one hour
5、把面团揉均匀后分成等大的小面团
Divide big dough into small doughs with similar size
6、把面团擀成薄薄的宽长条
Use rolling bin roll the dough to long wide strips, show picture as below
7、均匀的抹上油,再适量的撒上盐,胡椒粉和葱花
Apply oil on the strip evenly, sprinkle with salt, pepper and minced scallion

8、左右两边往中间折起
Fold it into small strip from both sides
9、然后左右两边再往中间折起
Fold it into smaller strip
10、把长条跟蜗牛一样的卷起
Roll them up, show picture as below
11、卷好后用手轻轻按压,压成饼状
Press scallion pancake to bigger pancakes carefully with hand
12、加热锅之后,放入适量的油,热锅凉油慢火两面煎
Add appropriate amount of oil after pan was heated. Place pancakes on the pan once you add the oil. Pan fried them both sides with medium_low heat
13、煎至两面都酥脆呈金黄色即可出锅
Take them out when texture turn to crispy with nice golden colour

南瓜糯米糍 Pumpkin Mochi

糯米糍又名状元糍,主要是糯米成

分,传统做法是将蒸熟的糯米饭,锤成米

浆泥后再包成团后使用。 相传南宋庆元

二年,福建泰宁人邹应龙赴京应试,村里

家家户户都送糍粑供他路上吃,并预祝他

金榜题名。邹应龙他在路上饿了,啃上几

口糍粑就着泉水喝。经过长途跋涉,历经

路途坎坷到了京都,由于才华横溢,满腹

经纶,在殿试中对答如流,于是宁宗皇帝

御笔亲点他状元及第。当他把从家乡带来

的糍粑呈献给皇上品尝时,连皇上对糍粑

也赞不绝口,赐名“状元糍”。

面食工艺的发展和食品样式的多样

化,造就现代糯米糍的品种繁多,有生面

团做的,蒸面团做的,可以加各种各样你

喜欢的馅料,花生,绿豆泥,南瓜泥和红

豆泥等等。而我介绍的是南瓜红豆糯米糍

是用糯米粉,少量生粉和南瓜泥和成面

团,加红豆馅料搓成小南瓜的样子拿去蒸

熟。让我们动手吧!

Glutinous Rice mochi are also

called Champion Rice Dumplings, a

traditional name. Glutinous rice

dumplings are made from glutinous

rice and supplemented with other

condiments.Not only it can eat,

hospitality,but also as a good gifts

for relatives after air dry.

According to legend, in the second

year of Qing Dynasty in the Southern

Song Dynasty. Zou Yinglong, a native

of Yi, went to Beijing to take the test.

On the way, Zou Yinglong was

thirsty,He drank a few sips of clear

spring when he was thirsty, He ate a

few bites of rice cakes when he was

hungry. After a long journey to capital

city,due to his outstanding talents, the

temple test was correct, and Emperor

Ningzong ordered his champion and

first place. When he presented the

rice dumplings brought from his

hometown to the emperor for tasting,

even the emperor praised his rice

dumplings with the name

“Zhuangyuan rice dumplings”. I will

show you how to make pumpkin

mochi with pumpkin shape.

面团材料 Dough ingredients

南瓜 Raw pumpkin

200 克(gram)

糯米粉 Glutinous rice flour

120 克(gram)

粘米面 Rice flour

50克(gram)

Potatoes starch

30克(gram)

Accessories:

red Bean paste:appropriate amount

Steps:

1、切成小块,把南瓜放蒸锅蒸熟,直至南瓜变软

Cut the pumpkin with the skin into chunks ,steam it in the steamer until it becomes soft enough

2、 取出南瓜后,去皮,捣成泥(或者用机器打成泥)

Peel off the skin after you take out the steamed pumpkins.mush the pumpkin puree (or you can blend in the blender)

3、加入生粉,沾米粉,和一半糯米粉用筷子搅拌

Stir potato starch, rice flour , half of glutinous rice flour and pumpkin puree together with chopsticks

4 、把剩下的糯米粉加进去,揉成团

Add rest of the flour into mixtures and knead it into dough

5、把面团分成25克大小的小面团

Separate the big dough into small dough with 25 grams (or similar size without weighing)

6、把红豆泥撮成20克的的小球

Make redbean paste into balls with 20 grams

7、把南瓜小面团搓成小碟

Make a round disk with a little pumpkin dough

8、把红豆球放在小碟中间,揉成小球

Place redbean paste ball on the middle of pumpkin disk, and make it into ball

9 、做完南瓜球后,用牙签做出南瓜的纹路

Use a toothpick to press out the pumpkin mark after you finish all the pumpkin redbean balls

10、插放一个葡萄干在南瓜糯米团上

Place a rasain on top of pumpkin glutinous cake

11、放蒸锅里蒸13_15分钟

Steam them in the steamer for 13 _15 minutes

12、可以出锅排盘

Ready for plating and enjoy yourself

玫瑰饺子 Dumpling with Rose Shapes

饺子是一种历史悠久的中国传统美食,源于古代的的“角子”。饺子原名又叫“娇耳”,相传是我国历史明医“张仲景”首先发明的,已经有一千八百年的历史。大寒小寒,过年都吃饺子,也是中国大多地方的习l俗。饺子之所以称为饺子是因为大年三十那天晚上子时,也就是大年夜的十一点都年初一的凌晨一点,不仅是新旧两年的交替,也是新旧两天的变更,人们管他叫“交子”.“交子”的谐音是“饺子”,所以叫做饺子。很多地方人们在大年夜11点之前一家人一起做好饺子,等到十一点后一家人一起其乐融融的分享团圆饭,表达人们在辞旧迎新之际祈求来年大吉大利,万事如意。

1、虾 碎 Minced shirmp
200 克 (gram)
2、肉碎 minced pork
100 克 (gram)
3、 豪油 Oyster sauce
1汤匙( tablespoon )
4、生粉 potato flour
1 汤匙 tablespoon
5、菜油,vegetable oil
1 汤匙 (tablespoon)
6 、盐 salt
1/2 茶匙 (teaspoon)
7、白胡椒粉 White pepper
适量 Appropriate amount
8、麻油 seseme oil
适量 Appropriate amount
9、生抽 light soy sauce
1 汤勺( tablespoon)

和馅 stuffings

把馅料混合均匀备用

Mix all the stuffing ingredients together evenly in a big bowl,set it aside

和面步骤 Steps:
1、把红罗卜打成汁,过滤掉红罗卜渣
Blend carrots dices and filter the carrot juice out , about 60 gram
2、一样的方法取60 克 的菠菜汁
Blend spinach into juice and filter out 60 gram juice
3, 把面粉分成三份,一份做原味的,一份红罗卜,还有菠菜的(一份100克)
Separate flour into three. One for original flavor ,one for carrot flavor and one for spinach flavor (100 gram each)
4、微波炉加热水到70度,然后缓慢倒进100克的粉中,边倒边搅拌,揉成面团备用
Warm up water to 70 degree in the microwave and pour to the one of flour slowly with stiring flour,knead into dough,set aside
5、同样的方法依次揉红萝卜和菠菜面团,颜色由浅入深不会毁掉浅色团的色彩。
Same procedure for carrot then spinach (light to dark colour,it won’t mess up)
6、让面团静置至少半个小时
Cover doughs and rest the doughs for at least half hours
7 、把面团揉匀后切成15克一个的小面团
Knead the dough well,and divide it into little doughs with 15 gram
8、把小面团揉成圆形
Knead small doughs into round shape
8、 擀成直径是10cm 的圆形,三张连排一起,然后放上肉馅
Roll small doughs into round disks,place three disks together, then apply some stuffing on top,show picture as below
9、把它们对折起来,如下图所示
Fold them up , show picture as below
10、把它们卷成玫瑰型
Roll them up into rose shape
11、 重复制作过程做完剩下的皮
Repeat the process until you finish the doughs
12、放到热锅上蒸20分钟左右
Place them on the steamer with boiled water, steam them around 20 minutes
13, 排盘上桌,要什么酱可以根据个人喜好,慢慢享用
